Ribs

MY FAVORITE WAY TO COOK RIBS...Baby back are my ribs of choice for pork ribs. They are tender and have very little fat. Pork spare ribs are bigger and meatier, but the also have a lot of fat. The best way to prepare your pork ribs is to first remove the thin layer of membrane that is on the back side of the rack. You do this by sticking one tine of a fork underneath the membrane by the bone at one end of the rack. Pull apart just enough to stick your finger in between. Push your finger in far enough to get a grip with your hand and pull down to separate it from the rack.
Now you're ready to season your ribs. I like to use garlic powder, onion powder, ground sage, corse salt, and a little bit of Tony's Creole seasoning. Next, put enough water to fill your baking pan an inch or so, add a tablespoon of Hickory Liquid Smoke to the water, and give it a little stir. Place the ribs face up in the water, but don't cram them in. Make a tight seal with aluminum foil and bake in oven at 425 degrees for about two hours. You'll know they're done when they smell like burnt hot dogs. Pull them out and stick a fork in between the bones. The meat should separate from the bone with ease when you give the fork a slight twist. Discard the water. Place ribs on a tray or cookie sheet and chill for about an hour.
When ready to cook, place them face up on the grill. Brush on your favorite flavor of BiG Daddy Jay's BBQ Sauce. When the ends of the bones start to bubble, turn them over and slather more sauce on the back side. When you're ready to turn them over again, do so, and brush them one more time with that yummy sauce. Wait a minute or two, then remove from the grill. ENJOY!!!

Saucy, Cheesy Meatloaf

You can take your own delicious recipe for meatloaf and substitute the tomato sauce or ketchup with my Original or FreakIn' Hot Sauce. Or try this amazing recipe.

Ingredients

  • 2 lbs ground beef or ground turkey
  • One egg
  • 1 cup oats
  • 3/4 cup BiG Daddy Jay's Original or Freakin' Hot Sauce
  • 1/2 lbs cheddar cheese cut into 1/2 inch cubes
  • 1 small diced onion
  • 2 large chopped cloves garlic
  • 2 tbsp each of garlic powder, onion powder, and ground oregano

Steps

  1. Place ground meat in large bowl

  2. Add all ingredients, except 1/4 cup of BBQ sauce, into bowl. With gloved hands, mix everything thoroughly. Try to keep cheese inside the mixture

  3. Grease a loaf pan and place mixture inside, shaping it into a loaf

  4. Pour remaining sauce down the center of the top of the loaf

  5. Place on center rack of oven. Bake at 375 for about an hour or until center reaches 165 degrees. Enjoy!!!

BiG Daddy Jay's Freakin' Hot Loaded Tater ToTs

Ingredients

  • Your favorite tater tots, hot and toasted
  • 2 tbsp BiG Daddy Jay's Freakin' Hot BBQ Sauce
  • 1/4 cup crumbled bacon
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped chives
  • 1/3 cup sour cream

Steps

  1. Place cooked tater tots in a large bowl

  2. Pour BBQ sauce over tots

  3. Toss the tots until well coated

  4. Place coated tots in microwave safe bowl

  5. Sprinkle shredded cheddar cheese over tots.

  6. Melt in oven or microwave until cheese is melted

  7. Sprinkle crumbled bacon over cheesy coated tots

  8. Top with chives

  9. Enjoy!


Zesty Corn on the Cob!

Once you've boiled your tender cobs of sweet corn, brush some of BiG Daddy Jay's BBQ Sauce over it. Sprinkle some Montreal Steak Seasoning all over and throw them on the grill. Get some good grill marks on there. Enjoy them with your favorite BBQ'd items!
